With a robust 14.5% alcohol content packed into each 750mL bottle, this wine promises to distract you from the chaos of spring break or the looming pile of dishes in the sink. Am I projecting? Perhaps, but let’s talk wine.

Intrinsic Wines takes a unique approach to crafting this Cabernet Sauvignon, deviating from the standard by aging the crushed grapes for nine months, significantly longer than the usual one-month period. This method imbues the wine with a distinctive flavor that truly sets it apart within the region.
Beyond their innovative wine-making process, Intrinsic Wines is also known for its philanthropy. For every bottle sold, $1 is donated to World Central Kitchen, contributing to global efforts to provide meals in the wake of natural disasters.
Tasting Notes:
This Cabernet Sauvignon is silky and smooth, with delightful hints of cherry and pomegranate, red licorice, and a subtle peppery finish. It’s light on tannins and notably savory, making it an ideal companion for a steak dinner. While professional notes mention an undertone of cocoa, it was the bouquet rather than the taste where this nuance was most apparent to me.

Fun fact this part of Washington is very sunny versus the rainy Twilight Washington we know. This particular Cabernet Sauvignon made a splash at SXSW in Austin, Texas, showcasing the depth and versatility of Washington wines to a broader audience.
